DAY 2 — First Feeding

Goal: Begin the discard-and-feed cycle.

  1. Grab your second identical jar and put it on the scale. Tare to zero.
  2. Scoop 75 g of starter from the original jar into the new jar. (The rest is "discard" — see note below.)
  3. To the 75 g of starter, add:
    • 50 g whole wheat flour
    • 50 g bread flour
    • 100 g warm water
  4. Whisk until smooth and homogeneous. Scrape down the sides.
  5. Wrap a rubber band around the jar at the level the starter currently sits. This is your growth marker — like the doorframe pencil marks parents make to track a kid's height.
  6. Loose lid on. Back to the warm spot.

About the discard: The leftover starter in the original jar is "discard." Don't throw it out — refrigerate it in a sealed container. It's gold for pancakes, waffles, crackers, biscuits, even pizza dough. Search "sourdough discard recipes" online for ideas.

Try to feed at the same time every day. Consistency trains the culture's rhythm.
