DAY 1 — Birth Day

Goal: Create the first flour-and-water slurry to attract wild yeast.

  1. In your large clear jar, add:
    • 100 g whole wheat flour
    • 125 g warm water (warm bath temperature, not hot — too hot will kill the yeast you're trying to cultivate)
  2. Whisk thoroughly with the mini whisk until no clumps remain.
  3. Scrape down the sides of the jar with a rubber spatula so no crust forms above the mixture.
  4. Place the lid loosely on top — the starter needs airflow. If your lid seals tight, leave it cracked open or set it on without latching.
  5. Set the jar in a warm, draft-free spot (ideally 70–78°F / 21–25°C). Out of direct sunlight. No cold windowsills.
  6. Walk away for 24 hours.

You will see almost nothing happen on Day 1. That is normal.
