DAY 7 — Recipe Shifts
The flour ratio changes to favor bread flour for structure development. From Day 7 onward, once-daily feeds are sufficient:
- Discard all but 75 g
- Add:
- 40 g bread flour
- 20 g whole wheat flour
- 60 g warm water
- Whisk, scrape, reset rubber band, loose lid, warm spot.
Note the shift: less total flour (60 g vs. 100 g), less water (60 g vs. 100 g), and the proportion now leans toward bread flour. You're transitioning a wild culture into a bread-ready leavening agent.
