๐ŸŸข Effort Level: Just Survive (5โ€“10 minutes, no planning)

Sourdough Discard Pancakes โ€” The single most popular use. Mix discard with an egg, milk, a pinch of baking soda, salt, and a touch of sugar. Cook on a griddle. Tangy, fluffy, addictive. Great for using ~150โ€“200 g at a time.

Sourdough Discard Waffles โ€” Same batter idea as pancakes but slightly thinner; pour into a waffle iron. The fermented flavor pairs beautifully with maple syrup.

Sourdough Crackers โ€” Spread discard thin on parchment, sprinkle with flaky salt + herbs (rosemary, thyme, sesame seeds, everything bagel seasoning), bake at 325ยฐF until crisp. Snap into shards. Possibly the most addictive cracker you'll ever make.

Discard Flatbread โ€” Mix 200 g discard with 50 g flour, 1 tsp salt, a glug of olive oil. Roll thin. Cook in a dry skillet 1โ€“2 min per side. Eat with hummus, dips, or as a wrap.

Discard Pizza Dough โ€” Mix discard with flour, water, salt, olive oil, a pinch of instant yeast (for reliability). Rest 1 hour. Roll out, top, bake hot. The discard adds flavor that beats most takeout dough.

Discard Biscuits โ€” Cut cold butter into flour, add discard + a splash of buttermilk. Pat out, cut, bake. Flaky, tangy, perfect with eggs.

Discard Banana Bread โ€” Replace some of the flour and liquid in any banana bread recipe with discard (about 100 g). Adds depth and slight tang. Same with zucchini bread and pumpkin bread.

Discard Blueberry Muffins โ€” Standard muffin batter with ~100 g discard folded in. Subtle tang that makes them taste bakery-grade.
