How to Store Your Daily Discard

While building the starter (Days 1–14), you'll accumulate a LOT of discard. Don't throw it away — pool it.

  1. Keep a single medium glass jar in your fridge labeled "discard."
  2. Each feeding day, after you transfer your 75 g of starter to its new jar, scrape the leftover discard from the old jar into your discard jar.
  3. Stir to combine with whatever discard is already in there. Different ages of discard mix together fine.
  4. Lid on. Back in the fridge.
  5. Discard keeps in the fridge for up to 1 week before flavor and quality degrade. After that, it gets aggressively sour and the gluten breaks down — still usable for some recipes but less versatile.

Pro tip: Once a week (say, every Sunday), do a "discard purge" — make one or two recipes from below, then start a fresh discard jar.
